La Carreta de Don Olegario is a traditional restaurant located opposite the main square. 

The atmosphere is friendly and the interior is decorated in a local style.

The menu is extensive and offers food prepared with regional ingredients such as humita, mondongo (tripe stew), carbonada, salteñas empanadas with cut meat, kid, lamb, grilled or stewed rabbit.

The desserts are outstanding and include dulce de cayote (type of fruit), cuaresmillo, figs and sugar cane syrup, mazamora (corn pudding) with alfeñiques (caramel bar), homemade ice creams and custard, and queso y dulce (cheese and quince or sweet potatoes).

The bread is homemade and cooked in the horno de barro and the wines from Cafayate are excellent.

The service is friendly and kind.

This century old house is one of the best restaurants in the town.

The interior décor is smart and tasteful.

The owner and chef, Lalo Angelina, has revived ancient Andean recipes in a menu that attempts to highlight the tastes of the cuisine albeit with a modern touch.

The amaranth, quinoa, llama and alligator and the api (purple wheat) are used as they are typical of the north and also as they have healthy nutrients.

Among the delicacies are llama carpaccio, llama sirloin steak in qolla aiwa with Andean potatoes and crispy quinoa, grilled trout and “three crazy liquid ravioli” (lemon verbena sauce, ginger and bay leaf) api foam with crispy cocoa and chocolate coolant.

The restaurant offers a very nice selection of wines from Salta and Mendoza.

The service is professional and it is recommended to make reservation on weekends.

The interior is very well decorated and food is served by waiters dressed as gauchos.

The menu is extensive with dishes from the north and traditional Argentine food.

The grilled meat cuts are very good but without a doubt the best are the empanadas, tamales and humitas, a succulent locro, carbonada (kid stew), cheese with cuaresmillo and Salteno nougat.

The restaurant features a huge horno de barro (mud oven) where they prepare the empanadas which are filled cut meat (as opposed to mince) and are rumored to be the best in Salta.
The restaurant does not accept credit cards so you can only pay with cash.
